This is a delicious, sweet cornbread and very moist. Also makes great muffins.
Yields: 1 corn bread 8 x 8 or 18 muffins
Preheat over: 350
Grease 1 baking pan (8 x 8) or 18 muffin cups
Mix the dry ingredients together in large bowl:
1 1/2 cups flour
2/3 cups granulated sugar
1/2 cup corn meal
1 Tbsp baking powder
1/2 tsp salt
Mix the wet ingredients together in smaller bowl:
1 1/4 cups milk
2 large eggs
1/3 cups vegetable oil
3 Tbsp melted butter
Add the wet mixture to the dry mixture and mix until incorporated. Mix until it is just together, no need to mix for long while.
Pour batter into prepared baking dish or muffin pans. Bake at 350 for about 35 minutes until golden brown and toothpick comes out clean.
