This is a delicious, sweet cornbread and very moist. Also makes great muffins.

Equipment
- 8 x 8 square cake pan - or- 18 muffin tins greese and set aside
- large bowl
- small bowl
- Measuring Cups and Spoons
- mixing spoon
Ingredients
Dry Ingredients
- 1 1/2 cup flour
- 2/3 cup granulated sugar
- 1/2 cup corn meal
- 1 Tbsp baking powder
- 1/2 tsp salt
Wet ingredients
- 1 1/4 cup milk
- 2 large eggs
- 1/3 cup vegetable oil delicious with extra virgin olive oil
- 3 Tbsp melted butter don't use margarine
Instructions
- Preheat the oven at 350℉
- Mix the dry ingredients together in a large bowl and set aside.
- Mix the wet ingredients together in small bowl.
- Add the wet mixture to the dry mixture and mix with a spoon until incorportated. Mix until it is just together, no need to mix for long while.
- Pour batter into prepared baking dish or miffin tins.
- Bake at 350 ℉ for about 35 minutes until golden brown and toothpick comes out clean.
- Remove from oven to cooling rack.
