This is a delicious, sweet cornbread that is very moist. Also makes 18 great muffins.

Equipment

  • 8 x 8 square cake pan - or- 18 muffin tins greese and set aside
  • large bowl
  • small bowl
  • Measuring Cups and Spoons
  • mixing spoon

Ingredients

Dry Ingredients

  • 1 1/2 cup flour
  • 2/3 cup granulated sugar
  • 1/2 cup corn meal
  • 1 Tbsp baking powder
  • 1/2 tsp salt

Wet ingredients

  • 1 1/4 cup milk
  • 2 large eggs
  • 1/3 cup vegetable oil delicious with extra virgin olive oil
  • 3 Tbsp melted butter don't use margarine

Instructions

  • Preheat the oven at 350℉
  • Mix the dry ingredients together in a large bowl and set aside.
  • Mix the wet ingredients together in small bowl.
  • Add the wet mixture to the dry mixture and mix with a spoon until incorportated. Mix until it is just together, no need to mix for long while.
  • Pour batter into prepared baking dish or miffin tins.
  • Bake at 350 ℉ for about 35 minutes until golden brown and toothpick comes out clean.
  • Remove from oven to cooling rack.
