Breakfast Pizza (Frittata)
Equipment
- Nonstick 10" skillet with lid
- Cutting Board
- Knife
- Flipper (pancake turner)
- Small Bowl to mix eggs
- Whisk
Ingredients
- 1 medium Tomato, Roma
- 1 Onion, Green
- 1 TBS Cilantro, fresh, chopped
- 1 Patty Breakfast sausage, cooked & chopped (optional)
- 2 slices Bacon, cooked & chopped (optional)
- 4 medium Eggs
- salt to taste
- black pepper to taste
- 1/4 tsp chili powder
- pinch cayenne pepper (optional)
- 1 tsp olive oil
- 1 10" Tortilla (low carb or regular)
- 1/4 cup Cheese, shredded, Mexican mix
- 1 TBS Salsa (optional)
Instructions
- Chop Veggies and meat and set aside.
- In a small bowl, combine eggs and seasonings and whisk together.
- In skillet, on medium heat, heat olive oil and add egg mixture.
- Cook egg on skillet until it is nearly set.
- Place tortilla on top of the cooking egg and flip so the tortilla is on the bottom of the skillet and egg is on top. Turn heat to low.
- Add veggies and meat.
- Add cheese.
- Place lid on skillet and heat for 1 minute then remove from heat.
- Move to cutting board when cheese is melted and cut like a pizza. Top with Salsa and serve
