Crunchy Sweet Potato Casserole

This is a recipe from my sister Sandy. I remember it to be a yummy treat that we shared on Thanksgiving one year. The best thing is — it is so simple!

Preheat the oven at 375 degrees

Ingredients:

  • 1 stick melted butter
  • 3 cups yams, mashed (1 large can is fine if your do not have fresh ones)
  • 1 cup sugar
  • ¼ cup milk
  • 2 eggs
  • 1 teaspoon vanilla

Mix above ingredients with electric mixer.  Place in baking dish.  Top with Crumble Topping, below:

  • 1 cup chopped nuts
  • 1 cup brown sugar
  • 1 cup flour
  • 1 stick melted butter (NOT margarine)

Mix well with fork and crumble over potatoes. Bake at 375 degrees for 30 minutes.

Sandy’s notes:

I will try using room temperature softened butter in base mixture.  I think the butter may be easier to incorporate this way.

Additionally I plan to cut the butter used for the topping into cubes and make the mixture in a food processor.  I think this will give the topping a crumbier consistency.
