French Dip Sunday Lunch

So simple and absolutely delicious! Great served with boiled or roasted new potatoes or rice and green beans or corn. I like it with a little melted Swiss or provolone cheese too. We enjoyed this for lunch after church when we were candidating for a pastorate. You will want to invite friends for this dish … it is hard to mess up the recipe … it’s just too good!

Ingredients:

  • 1 beef roast (3 pounds)
  • 2 cups water
  • ½ cup soy sauce (I like using the less sodium kind)
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 bay leaf
  • 3 to 4 whole peppercorns
  • 8 French rolls, split

Place roast in slow cooker (crock pot). Mix spices in small bowl. Add water, soy sauce and spices to pot with roast. Cover and cook on high for 5 – 6 hours or until beef is tender.  Remove meat from broth, shred with forks and keep warm.  Strain broth and skim off fat.  Pour broth into small cups for dipping.  Serve beef on rolls.
