Potatoes – Party Hash Browns Potato Casserole

My sister has made this potato casserole for family gatherings several times. I finally asked her for the recipe. She has had the recipe for so many years she cannot remember where she originally got it. Even so, this casserole is a great side dish for breakfast or any meal. It is incredibly simple and scrumptious.

Equipment

  • 9 x 13 baking dish
  • large bowl
  • large mixing spoon
  • Measuring Cups and Spoons

Ingredients

  • 2 pounds frozen hash browned potatoes (thawed) **
  • 1 can cream of chicken soup
  • 1 can cheddar cheese soup **
  • 1 cup diced onions
  • 1 pint sour cream
  • 1 stick (½ cup) melted butter
  • pepper to taste **
  • cups crushed corn flakes or crushed buttery crackers

Instructions

  • Preheat oven at 350 degrees
  • Lightly oil the baking pan and set aside
  • Combine all ingredients except for corn flakes/crackers into a large bowl and mix together.
  • Put mixed ingredients into the prepared baking dish
  • Top with corn flakes/crackers
  • Bake at 350 degrees for 1½ hours
  • ** Serving suggestions to kick it up. Consider using nacho cheese soup, potatoes O'Brien and cayenne pepper
