Reubens in New Mexico

Reubens in New MexicoI ran out of bread but I had some amazing ingredients and so I took it and made one of my favorite sandwiches — Reubens in New Mexico. Credit goes to my hubby, he thought a tortilla would be great as a Reuben. He was right!

Reubens are quite popular in the east. Go to any New York style deli and you can get a good Reuben. One of our favorites in Ohio is Corky & Lenny’s. Their online menu actually has a category called Reubens, Burgers & Favorites. They have several different ones you can order, but anyone who loves a Reuben knows that the classic has Swiss cheese, corned beef piled high, sauerkraut and Russian dressing. This all goes atop some fresh rye bread and it is grilled to perfection. It even looks like they now have a Quesadilla Reuben. Shoot! I thought this was an original recipe I whipped up.

Ingredients

  • Flour tortillas
  • Turkey pastrami
  • Swiss cheese
  • 1 Tablespoon catsup (will be enough for 2)
  • 1 Tablespoon mayo (same as above)
  • sauerkraut (drained)
  • olive oil

Take the catsup and mayo and mix them together in a small bowl and set aside.

Heat up a fry pan or grill.

Brush small amount of olive oil on a tortilla and place oil-side down on the hot pan or grill.

Spread some of your catsup/mayo mix onto 1/2 of the tortilla.

Place a slice of Swiss cheese on the other 1/2 of the tortilla and pile on some turkey pastrami and about 2 generous Tablespoons of drained sauerkraut (if you don’t drain it you will have a soggy sandwich).

Grill the open-faced tortilla until lighly brown (about 2-3 minutes) and then fold the dressing side over the cheese/meat/sauerkraut side.

Serve with some chips or potato salad and some fresh fruit.
