Vegetarian Meat(less)balls

I have no meat in the house and I need to make dinner.  I have no way to get to the grocery right now so I have combed through my recipe box and have found a recipe that I collected 20 years ago!  You will be amazed and no one will believe that there is no meat in this recipe.

Preheat oven to 350 degrees. Prepare 9 x 13 baking pan with 1/4 cup of vegetable oil

Ingredients for balls:

  • 1 Cup pecan meal (finely ground pecans)
  • 1/2 pound cheddar or colby cheese (grated/shredded)
  • 1 large onion, finely chopped
  • 5-6 eggs
  • 1 Cup Sunshine Hi Ho cracker crumbs (Ritz work too)
  • pinch of sage
  • 1/2 teaspoon of salt

Ingredients for sauce:

  • 1 can tomato soup
  • 1 can of water
  • 1, 8 oz. can tomato sauce

Mix ingredients for balls until combined.  Make walnut sized balls. Place into prepared baking pan with oil.  In separate bowl mix ingredients for sauce together until combined.

Pour sauce over balls and bake at 350 degrees for 30-45 minutes.

Serve with your favorite pasta or use on toasted buns as meat(less)ball sandwiches with some sauteed onion and bell peppers and shredded mozzarella cheese.  Pasta or sandwiches will taste wonderful with a side salad.

Prepare ahead hint: You can flash freeze these balls on a baking sheet and then store them in a freezer container to use later.  (flash freezing makes it so they will not stick to one another when stored).
