Breakfast Pizza (Frittata)

A quick and simple low carb breakfast pizza. Can be made with or without meat.

Ingredients
  

  • 1 medium Tomato, Roma
  • 1 Onion, Green
  • 1 TBS Cilantro, fresh, chopped
  • 1 Patty Breakfast sausage, cooked & chopped (optional)
  • 2 slices Bacon, cooked & chopped (optional)
  • 4 medium Eggs
  • salt to taste
  • black pepper to taste
  • 1/4 tsp chili powder
  • pinch cayenne pepper (optional)
  • 1 tsp olive oil
  • 1 10" Tortilla (low carb or regular)
  • 1/4 cup Cheese, shredded, Mexican mix
  • 1 TBS Salsa (optional)

Equipment

  • Nonstick 10" skillet with lid
  • Cutting Board
  • Knife
  • Flipper (pancake turner)
  • Small Bowl to mix eggs
  • Whisk

Method
 

  1. Chop Veggies and meat and set aside.
  2. In a small bowl, combine eggs and seasonings and whisk together.
  3. In skillet, on medium heat, heat olive oil and add egg mixture.
  4. Cook egg on skillet until it is nearly set.
  5. Place tortilla on top of the cooking egg and flip so the tortilla is on the bottom of the skillet and egg is on top. Turn heat to low.
  6. Add veggies and meat.
  7. Add cheese.
  8. Place lid on skillet and heat for 1 minute then remove from heat.
  9. Move to cutting board when cheese is melted and cut like a pizza. Top with Salsa and serve

Notes

This is a quick and easy low carb recipe. You can change up the toppings however you like. I made several of these one day and took them to early morning Bible study. I layered them in a Dutch oven with waxed paper in between layers and they served up great.
